Menu Plan through August 4, 2013

We have a calm week but a very busy weekend ahead.  With that being said I'm going fairly light on the meal department.  We have the State Fair and a local festival to attend.  I'm really looking forward to some serious fair food.  My mouth is watering for a corn dog and Rory has been talking about lemon shake ups.  His class made a batch of shake ups at school and we re-created them this weekend.  Now, I'm anxious to get him one at the fair.



Monday (meatless)-Zucchini Fries, fresh melon, blackberries and cherries
Tuesday-Waffles with homemade chocolate chips and fresh fruit
Wednesday-Runza Casserole
Thursday-Irish Egg Rolls
Friday-Rory, Papa and Uncle Seth out for boys night while I work at the local festival
Saturday-State Fair Bound--bring on the corn dogs!
Sunday-at our local fair

Fishing and Snapping Beans

Josh and Rory have two days a week that are their "boys days."  I know they both look forward to them.  Rory has been asking to go fishing for quite some time.  This week they were able to go to Josh's parents and get some good quality fishing time in.  I was at work but it sure was fun to hear their fishing stories and see the pictures.  Rory assured me that he caught 4 fish--although he did confess that he didn't touch the worms or the fish.  I can't blame him there--he must get that from me.  Rory also took a ride with Pappy on the John Deere lawn mower and saw his baby cousin Carl.  It made for one busy day!




The boys got home a little later than usual so we canceled our usual evening plans and stayed home to work in our yard and garden.  It ended up not being what we had planned but it was a beautiful evening and we had a lot of fun being together and pretending to be farmers. 

I wish I could say that these lovely green beans are from my garden but **big sigh** they are not.  We were able to get one good picking off our beans.  It must have been at that point that the neighborhood rabbits realized that we had in fact planted the beans for ourselves.  Within 2 days all 3 rows of beans were chomped down to stems.  Stinkin' rabbits.   Josh's sister, Rebecca and her husband are real farmers and I'm thankful that she had plenty of beans to share. You can read all about her farm adventures here.  As dorky as it sounds I was excited to have a bushel basket too!  Even though we are smack dab in the middle of suburbia it makes me feel like we are living on our own little homestead.


Rory was a good helper snapping beans--he lasted for at least 15 minutes and was able to keep the ends separate from the good pieces.  Once Josh started pulling weeds and digging in the garden I lost my little helper.  In all it took about 2 hours for me to snap 1/2 bushel.  This may sound even more dorky but I LOVE snapping beans.  It's very therapeutic.  I can get into a good rhythm and move my fingers without thinking.  In some ways it reminds me of music and playing the piano.  Get into a rhythm and let your fingers do the rest.  

When I was younger I would stay with my grandparents in Indiana for a week in the summer.  I loved it.  There was always some adventure to be had.  I can remember sitting on the screened porch with my Grandma snapping beans.  I don't know why I distinctly remember that but I'm thankful it's a memory I have.  She passed away when I was 15.  I have some great memories but I wish she was still around so I could more solid memories instead of fuzzy ones that are in pieces.  Most of the things we did revolved around food and the kitchen.  There was always something to be learned.  I can remember calling her once I got back home to talk me through how to make something.  I miss hearing her voice and her advice.  I really could have used her advice once I started to can these beans.  After all this hard work not one of my jars sealed so I froze them instead.  After a telephone consult with my mother -in-law we discovered a few crucial mistakes that I can fix so hopefully when I can the next batch they will seal.


This is our resident green bean stealer...a.k.a Jessie Mae.  She would run up on the deck, grab a few beans and then run away before I could catch her.  She is a sneaky one!


We stayed outside until it was bedtime.  We were all exhausted after such a long productive day.  It's days like this that make me so happy.  No running around to do and all of us are together.  It didn't cost us any money to dig around in the yard, have fun and be together.


I'm looking forward to many more days like this one!

Menu Plan thru July 28, 2013

We had a nice relaxing weekend and the weather was beautiful!  A little cooler and the humidity finally dropped below 80%.  It felt like I could actually breathe outside! 

Rory and Jessie are starting to do things together and figure each other out.  Jessie still play bites and mouths him but we had major improvement this weekend.  Here they are both sitting quietly watching Happy Feet.  It's our usual Sunday routine to wind down from the weekend.  Around 6:30 I pop in a movie and we chill.  It was nice that everyone was chilling at the same time!




Our garden is yielding some results--mainly in the zucchini department.  I'm amazed at how fast those things can grow!  We've got lots of it and it's time to start using it up.

Here is what's on my line up:

Meatless Monday-Pasta, tomato sauce and garlic bread
Tuesday- Paula Dean chicken salad on toast
Wednesday-Italian Subs, pretzels and fresh fruit
Thursday-Grill out at our friends and we are taking hot dogs (the all natural, nitrate free kind) and melon
Friday- TBD and baked zucchini fries
Saturday-Grilled Steaks, fresh from the garden green beans and roasted potatoes
Sunday-out or leftovers
Breakfasts: Zucchini Bread

Puppies and Preschoolers

We've had our puppy, Jessie Mae, for a month now and it's been a very busy month!  Adding a puppy to our house was the same as adding another preschooler.  I did not realize how similar they are.  I have to make sure both go to the potty in the proper location, eat a balanced diet, don't eat things they should not and in general keep them safe from themselves.
 
Even though we were prepared for a puppy I think it's one of those things you can't know until you've been through it!  Our past two dogs came to us as adults, already potty trained and knowing basic manners.  Jessie is a great puppy-overall very calm and well mannered but still has enough energy to rival a preschooler!  She play bites with Rory and we are working on that.  The trainer we've been working with says this is completely normal and no indication of aggression later in life.  She is simply treating Rory the way she would a litter mate.  We are having to train Rory and ourselves as much as Jessie.  I was worried that Rory wasn't liking her or was upset about the play biting...those puppy teeth are sharp!  So, I casually asked him what he would think if Jessie went to live with someone else.  I thought he would say ok since the two of them haven't figured each other out yet but he responded quickly by saying, "NO!  I would miss her!"  It warmed my heart and made me feel relieved about bringing a puppy into this house.  I was afraid that he was not liking her.  I'm really looking forward to seeing them grow up to be great buddies.
 
 
 
 
 
 
Jessie was about 16 pounds when we got her and looked like a typical little puppy--she didn't have much form yet and people looked as at funny when we said she was a Doberman.  Puppies are like babies-they all look pretty similar but now Jessie has nearly doubled in size (in one month!) and looks like a little Doberman.  We thought she was going to be on the smaller more petite side but so far it's not looking that way!  She is getting much taller and she is having trouble keeping up with her long legs.  She is lacking in the gracefulness department!
 
We started puppy class last week and while Jessie is not ready to earn a gold medal she is a great student and quite the social butterfly.  Usually it's hard to get her to pay attention because she is too busy making friends with the other puppies.  She is proving to be quite smart and catches on quickly--she could take first prize for cutest puppy!
 

 
 
 
All around she is a great pup-I think the boys have a great buddy to go fishing and hiking with, yet, she is calm enough to sit with my while I read or play the piano.  Puppies can be a handful but Jessie is proving to fit in quite well with our family.  She likes to be wherever we are and that is exactly what we were looking for.

Menu Plan thru July 21, 2013

Our family had such a wonderful relaxing weekend that I completely forgot to menu plan for this coming week!  Whoops!  Luckily, I had started on some sort of outline earlier last week so I have a general idea.

We've been starting to harvest vegetables from our garden!!  I also signed us up for a produce co-op.  Maybe it's not really a co-op because we aren't contributing anything but every other week a bin of fresh fruits and veggies shows up at my door.  It's awesome!  We've only had 2 bin deliveries so far but I can already tell that I like it!  This week a few things came that I don't normally buy so it's pushing my creative limits....like kale and bib lettuce.  I can say without a doubt that I don't buy some of the items at the store because they don't look very appealing...but the head of lettuce I received this week is beautiful...literally.  Anyway, all of this is make menu planning more fun and challenging.



Monday-Peanut Butter & Jelly, pretzels and grapes  (believe it or not, that is really what I wrote down.  Thankfully, we are a family that genuinely likes peanut butter and jelly)

Tuesday-Zucchini Pizzas

Wednesday- Sweet Chicky Nuggets.  Josh and I will be eating ours in the form of a salad, tater tots and fresh cantaloupe

Thursday-Savory Chicken Pies

Friday-Out with Papa

Also, I need to figure out what to do with kale?!

I haven't planned as far as the weekend yet....I'll be looking at Organizational Junkie for a few ideas to round out the week!

The Harvest Begins....

As with the rest of the Midwest we have been pounded with rain everyday.  Although normally this is great for crops I was worried that ours were going to rot from lack of sunshine and the ground hasn't dried out in over 2 weeks.  Luckily, the things we have planted loved the rain and have flourished!
Tonight was the first "picking" and it was very exciting!  Rory wasn't too sure at first but he got the hang of it quickly--and he was allowed to walk around in the mud.  Not sure which he thought was more fun-the mud or picking from the garden!







In all, we picked 2 zucchini (there are lots more that are just days away from being ready) and about 16 ounces of green beans!  One thing we learned already that we should not have done is stagger our beans.  I thought we would be overwhelmed with beans so we spaced each planting about 2 weeks apart but since I'm planning on canning them it would make more sense to have a bunch of beans ready at the same time.

Josh said we could get probably 3 pickings off of each bean plant so hopefully I can refrigerate what I have and time things so I can can a full batch at once.  I don't really want to drag out my canner for 1 or 2 jars.  Next time we will plant all our seeds at the same time, at least for things I want to preserve.




Before we put a fence around the yard, a deer came and munched our strawberry plants to the ground.  I thought there was no recovering from that.  I've heard strawberry plants are fairly hardy so I let them be to see what would happen.  They came back--and with more blooms that they originally had!  There were 2 berries ready.  I think Rory was most excited to pick those!  The birds had done a number on one so really only one little berry was ready for eating.

He wanted to eat one right away.  In the spirit of eating fresh from our garden we all gathered in the kitchen and I sliced up our one little berry.  We counted to 3 and popped our teeny tiny bite in our mouth....it was one of the SOUREST berries I've ever had.  Rory was a trooper though--he made a pucker face and eeked out, "yum..."  I had to laugh because he was being such a good sport.  In the fall, we are going to clear a larger portion of the yard and move the berry plants.  Maybe next year we will have more than one berry to eat!




This is the first year Josh and I have purchased fresh beef....as in, fresh from the farm--can't get any fresher.  Josh's sister and brother-in-law are dairy farmers but also raise cows for meat.  It is the BEST meat I've ever had.  No joke--will never buy red meat from the grocery again.  In comparison-the grocery store tastes like rubber.

This is also the first time I've ever called the processing place to order what I want.  Bless the woman's heart for helping this city girl out.  She was asking me all sorts of questions about what I wanted and I had no clue what she was talking about.  I do have a few cuts of meat, like short ribs, that I've never used before so this will expand my cooking horizons!  She did throw me a bit when she asked if I knew what cow I was getting...I paused and said that if she had the name I would prefer not to know.  I still don't know and I don't want to.  That lead me though to ask her about the whole process.  I know that Becca and Dan are nice to their cows and treat them humanely.  The barns are clean and the cows look as happy as the ones in the commercial on tv. :)  I'm happy to report that the whole process is as humane as it can be--and quick.  No suffering on our part.   I'm not a part of PETA or anything but it does make me feel better knowing exactly where my food came from and that no cow was treated wrongly.  

I thought one cooler would fit  most of our meat...luckily, Josh thought to take laundry baskets and that is how our meat rode home!  Our freezer is now chock full and I'm just itching to get the grill out!  Our next menu plan should be quite exciting!







I've been trying to purchase local and organic because it's better for our bodies, the animals and the environment so I'm really pumped that the majority of what we will be eating over the next few months is about as local as we can get!

Menu Plan thru July 14, 2013

Better late than never I suppose!  I tried to get this up on Monday but was having technical issues.  Oh well.  So far our week has been relatively calm and I'd like to keep it that way.

Rory and I have picked up a few local goodies at the farmers market so I'm excited to incorporate those in to the menu.  We also expect to harvest a few things out of our garden tonight!  I'm looking forward to seeing how Rory reacts to picking our own food out of our garden...and if he will eat it!

Josh and Rory are also picking up fresh meat today.  We ordered a portion of beef from his sister and brother-in-laws farm.  I've had their meat a couple times and I can say without a doubt I will NEVER buy red meat from the store again.  It's like comparing a diamond to a cubic zarconia.  It's just not the same.

Happy Birthday 'Murica!

Happy 4th of July!!  Rory asked why we were going to a parade, so I explained that it was America's birthday.  The rest of the day he kept saying and singing, "Happy Birthday 'Murica!" 

For me, the 4th of July is one of my favorite holidays--it's warm, the air is happy, picnics and parties are everywhere and the night is capped off with fireworks!  And who doesn't love a good parade?  It did however, rain on our parade...literally!  We are thankful that it didn't storm--just a light rain and it did not mess up our fun!  Rory said the favorite part of the parade was the drums--we saw 3 marching bands plus a few dance groups.







This is our second time at this parade and we learned last year to take a bag--Rory swept up on the goodies.  We have a whole bag full of candy!  He was very excited that people were bringing him "treats."



After the parade, we invited our friends over to watch fireworks.  Our yard backs up to a lake and our neighbors had given us a heads up that the residents across the lake spend a lot of money on fireworks every year.  Our City also puts on a great show at  park down the street.   We had a great view from our backyard.  We had a great show and didn't have to worry about parking, snacks or a bathroom close by!


I bought one pack of sparklers this year--I wasn't sure how that would work with toddlers--we had a total of 6 at our house!  Overall, it went very well--Rory was not afraid at all and everyone had a great time.  We had one burn but as of today I've heard that she is doing fine.  We had a paramedic and 2 nurses on site!

I do remember saying the following, of which, I never thought would come out of my mouth...ever:

1. Don't put the sparkler in her hair!
2. Don't put the sparkler on the house!
AND...
3. Don't put the sparkler up your nose! (This was after it had burned down)
